Welcome!

Hi! Welcome! Thanks for buying basil from us. My sisters like to smell the leaves, I like to help with the harvest.

Mom says we should offer ideas, recipes and links to help our customers to make the best use of the fresh herbs. I love to make tomato-basil sandwiches. I also like fresh basil on my pizza.

We'll do the research so you can enjoy the food. If you find any recipes that you want to share just leave it in a comment on the "User's Recipes" post.

Allrecipes.com's "Chicken In Basil Cream" (with modifications)


INGREDIENTS
Chicken:
1/4 cup milk
1/4 cup dried bread crumbs
4 skinless, boneless chicken breasts (Mom made 6 chicken breasts)
3 tablespoons butter (Mom probably used 5-6 Tbsp of butter)

Sauce:(Mom doubled this so we'd have enough sauce to go over our egg noodles)
1/2 cup chicken broth (Mom used a whole can and just let it boil longer)
1 cup heavy whipping cream (Mom used whole milk and 1/4 c cream cheese)
1 (4 ounce) jar sliced pimento peppers, drained (Mom used roasted red bell peppers)
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil (Mom probably used about 8 leaves)
1/8 teaspoon ground black pepper (to taste)

DIRECTIONS
1. Place milk and bread crumbs in separate, shallow bowls. In skillet, heat butter or margarine to medium heat. Dip chicken in milk, then coat with crumbs. Cook in butter or margarine, on both sides, until juices run clear (about 10 minutes). Remove and keep warm.

2. Add broth to skillet. Bring to a boil over medium heat, and stir to loosen browned bits from pan (Mom let this reduce a bit). Stir in cream and pimentos; boil and stir for 1 minute. Reduce heat.

3. Add Parmesan cheese, basil and pepper. Stir sauce and cook until heated through. Pour mixture over chicken and serve! (Mom served the chicken over Egg Noodles one night and Wheat Rotini pasta the next time she made it. We liked the Egg Noodles best, even though the wheat was supposed to be better for us.)

Basil Butter

This is great on corn or bread and can be frozen!

INGREDIENTS
4 cloves garlic
15 leaves fresh basil
1/2 teaspoon freshly ground black pepper
1 cup butter

DIRECTIONS
Place garlic, basil, and pepper in the bowl of a food processor. Process until the garlic is in small bits. Add the butter, and process just to mix together. Spoon into container, and refrigerate until firm.
